Here's what I'll probably cook with our first egg, a way the whole family can share! (Go ahead and laugh! You'll be laughing with us, not at us...we know how corny we are!)
Whole Wheat Pancakes (delicious!)
Mix:
3/4 c. all-purpose flour
3/4 c. King Arthur white whole wheat flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1 Tbsp. brown sugar
Separately, whisk:
1 large egg
1 1/3 c. buttermilk*
1 Tbsp. oil
Combine just until moist; batter will be lumpy. Pour 1/4 c. batter for each pancake onto greased hot griddle. Makes 10 4-inch. pancakes. Dried blueberries or fresh diced apples may be added. Serve with maple syrup. *(To sour sweet milk, add 1 Tbsp. vinegar or lemon juice and fill to make 1 c. milk; let stand for 5 minutes)
