Here's a great recipe for "White Chili" made with chicken and great northern beans. Very filling and flavorful and healthy too! This recipe makes 6 quarts, just enough for a large crockpot.
WHITE CHILI
4 lbs. chicken breast, cooked and diced
8 c. chicken broth*
4 cans (15.5 oz.) Great Northern Beans, rinsed and drained
2 cans Ro-Tel tomatoes
2 large onions (or 3 medium) diced
3 jalapeno peppers, seeded and diced
4 garlic cloves, minced
3 tsp. dried oregano
1 Tbsp + 2 tsp. ground cumin
1 Tbsp. garlic salt
2 tsp. onion salt
Mix in crockpot and cook on low 6 hours. Serve with sour cream and shredded Monterey Jack cheese.
*I prefer to make my broth with bouillon cubes because it's more flavorful, but if sodium is an issue, you can buy low-sodium broth or, of course, make your own.
